Italian meatballsSimple

Simple, easy and bursting with flavor!

What I used:
1 lb. ground turkey
1/4 cup Italian salad dressing
10 crushed saltine crackers
1/4 cup sour cream
Fettuccine pasta
1 beef bullion cube
Sprinkling of cheddar cheese

Take your crushed crackers and 2 tbs. salad dressing and mix it well with your meat. Form several meat balls. Pour the rest of the dressing (add more if needed) into a skillet and heat up. Popover Pizza Casserole

This dish was a hit with my hubby, but honestly it was not my favorite. I suppose it all depends on your taste buds :) It was pretty simple to make!

What I used:
1 lb. ground turkey
1 jar pizza sauce
1 bag (12oz) mozzarella cheese
1 can mushrooms
1 cup flour
1 cup milk
2 eggs

Brown your meat, pour in pizza sauce and mushrooms. Bring to a boil then remove from heat for 2-3 min. Spray a baking dish with non-stick cooking spray and pour in your meat mixture. Top with cheese. In a bowl combine the flour, milk and eggs, beat well. Pour this mixture on top of the layer of cheese. Bake at 425 for 25-30 min.
(This recipe came from the book 6 ingred. or less, I added the mushrooms, not in original recipe.)

Breakfast in bed

On the days my hubby has off work I try to make him breakfast in bed :) A little spoiling never hurt anyone right? With this french toast recipe it can be whipped up in no time!

What I used:
Sandwich bread (you can use french bread if you wish)
3 eggs
1 cup milk
1/8 tsp. cinnamon
1/8 tsp. nutmeg
maple syrup
powdered sugar

In a bowl beat the three eggs. Add milk, cinnamon and nutmeg to eggs. Heat up a sprayed skillet. Dip your bread into the egg mixture, covering both sides. Place in your skillet and cook until golden brown and cooked through. Top it off with syrup and a sprinkling of powdered sugar. Completely delicious!

6 Ingredients or less

Shortly after getting married my mom gave me a cookbook entitled "6 Ingredients or less". Many times when I wasn't prepared for a meal, this book has come to my rescue! All the recipes are pretty basic and come with things already in your cupboard. I made the Parmesan Chicken recipe last night and it was great! I didn't serve it with a sauce, but a red sauce would go fabulous with it!

What I used:
2 boneless skinless chicken breasts
2 tbs. melted butter
1/4 cup parmesan cheese
1/4 cup Italian dry bread crumbs

Preheat your oven to 350. Coat the chicken with the melted butter then dip it in the parmesan cheese and bread crumb mixture. Coat evenly. Bake for 30 min. If you think it is starting to look dry, you can use a pastry brush to add more butter on top.

Grilled Chicken

Since the weather has begun to warm up a bit, we had been craving a good juicy piece of grilled chicken!! So last night we pulled out the good old charcoal grill (our favorite way to grill) and my hubby went to work! He is the master grillsman when it comes to cooking out doors :) He enjoys it and I enjoy eating his creations! Here is his recipe for a great tasting mouth watering meal!

What he used:
2 pieces of boneless skinless chicken breast
2 tbs. melted butter
Lowerys seasoned salt

Get your coals nice and hot. Brush your chicken on one side with the melted butter and place a generous covering of seasoned salt. Put that side down first on your grill. Do the same to the other side and cook until the juices run clear. It has always been a crowd pleaser!

Chicken Casserole

Shortly after graduating from college my husbands mother made up a recipe book for him, kind of to help him as he would be needing to cook for himself! They were simple recipes that anyone can make and they taste great. My hubby is a great chef himself, but this book helped him along. This recipe was included in it and please forgive me for not having a picture. I forgot to take one yesterday when I made this! (ooops!)

What I used:
1 chicken breast cut up (this can increase according to family size)
2 cans cream of chicken soup
good dollop of sour cream (enough to make it creamy)
Mix all together
Top with:
1 tube Ritz crackers (or any other brand, works just as well)
1 stick of melted butter

Bake at 350 for 50 min. Serve over cooked noodles, you can also serve this over rice.

Chili Chicken-n-Rice

A bit on the spicy side, this dish made a yummy dinner! After a somewhat busy day it was nice to not have much to do to get this dinner on the table! Within the first bite my hubby was impressed and proclaimed "you can definitely make this again!" He is a lover of all things spicy so if you are one of those people or know someone like that, this would a perfect meal to make!

What I used:
2 boneless skinless chicken breasts
2 cups cooked rice
1 can of chili with beans
1 envelope taco seasoning
Cheese (you can use sliced cheese, grated cheese, anything!)

Cook up your rice. Brown up the chicken in a skillet. In a greased baking dish pour your rice into it. Mix up your chili and taco seasoning then pour on top. Place chicken breast on top of the chili. Cover and bake at 350 for 25 min. Uncover, place all the cheese you want on top and bake until melted.

Candy Bar Cookies

The other day we headed to my sis in-laws house for dinner and I wanted to take something over as a small "thank you". So I filled up a jar with most of the ingredients needed to make these cookies. After making the mix up for her, I couldn't resist! So yesterday I went to work and made up a batch myself. I did tweak the recipe a smidgen, only because we are huge chocolate lovers:) Once they came out of the oven we both bit into these cookies that were so moist and melted right in our mouths. Is your mouth watering yet?! Hope you all enjoy this recipe as much as we have!!
(Recipe from the book: Gifts in a Jar)

What I used:

1/2 c. sugar
1/2 c. brown sugar
1 tsp. baking soda
2 cups all-purpose flour
1 c. of your favorite candy bar, chopped (I used andes mints)
I also added a handful (or two) of chocolate chips!
3/4c. butter/marg., softened
2 eggs, slightly beaten
1 tsp. vanilla

Preheat oven to 350 degrees. In a large bowl, cream butter, eggs and vanilla. Add the rest of the dry ingredients and stir until the mixture is well blended. Drop by rounded tablespoons onto a greased cookie sheet. Bake for 10-12 min. Transfer to wire racks to cool.

Completely delicious Pumpkin Bread!

Nothing says home like a great slice of warm pumpkin bread, at least for my family anyway. We are huge fans of this warm piece of deliciousness!! Thinking back, I cannot remember where I found this recipe, but it is so simple and my bread has come out perfect every time! Please forgive me that there is no picture....I will work on getting one :) In the meantime, give this recipe a shot and let me know what you think!!

What I used:
2/3 c. shortening
2 2/3 c. sugar (I usually use less....you can usually cut your sugar down by 1/2 and not notice a difference!)
4 eggs
1 (16oz.) can pumpkin
2 tsp. baking soda
2/3 c. water
3 1/3 c. flour
1 tsp. cinnamon

Mix all ingredients and pour into greased bread pans. Bake at 350 degrees for 1 hr. or until toothpick comes out clear. I tend to bake mine for 50 min., it keeps the bread from getting to dried out and keeps it moist much longer!

Organization 102

Are you an organized person? Someone that gets a thrill out of having everything in it's place and knowing exactly where that place is? I suppose I would fall into that category. My life would be so crazy if I was not organized! Right down to my grocery list everything is in order and it is so helpful once I get to the grocery store! Getting groceries can be a chore for some and a complete joy for others! Picking up the foods that please you and your loved ones does not have to be a drudgery and can really be done rather quickly if you organize your list.
What I do:
Throughout the week I have a list going of things we need, I have a column for food and a column for other. I keep it in my kitchen and as the days go on I write down the things we need as I think of them. I also plan a menu for the week (you can plan a menu for one week or even a month, depending on how you shop) and write down the ingredients I am going to need. Then on the day I am going to go gather the goodies I re-write my list organizing it by sections, ex.: all the dairy are together, all the meats are together etc.... As I get to the store and begin my hunt I don't have to continually search over the entire list and I don't waste time going from section to section searching for what I "may need". I know exactly what is needed and right where to find it! Plus, sticking to the list really saves on the budget, not to mention I don't go get groceries when I am famished! Hope it helps! Happy shopping!!

Diced ham, onion, green pepper, tomato, cheese, mushrooms, etc. for omelets.
One Ziploc quart-sized freezer bag/Person
