Lemon-pepper Chicken

What I used:

2 chicken breasts
Lemon Pepper seasoning
1 -2 tbs. oil

Pour your oil in a skillet and warm it up. Sprinkle as much seasoning on as you wish and place in the skillet. Cook on med. heat turn over once until juices run clear. Once the chicken was cooked I placed it in a bowl of steaming hot water to keep it from drying out. Just before eating remove from water and sprinkle with a little more seasoning if desired.

Ham and Cheese wraps

This recipe came from a Taste of home magazine, however I did tweak it a little. It tasted so great and made us feel so healthy!

What I used:
4 flour Tortillas
Sliced deli ham
Shredded cheese
lettuce
tomato
green pepper
Dressing:
2 Tbs. milk
2 tsp. sugar
1 tsp. prepared mustard
3/4 cup mayo
1 tsp. celery salt

Put 5 slices of deli ham on tortilla with about 1/4 cup of cheese. Roll up and seal closed with toothpicks. Bake on a cookie sheet at 350 for 14-16 min. In the meantime get your dressing ready as well as the rest of the ingredients. Once the wraps are cooked remove from oven and open your wrap up 1/2 way in order to place your lettuce, pepper and tomato mixture inside the wrap. Top with dressing and roll back up. The taste is amazing!!

Sweet-n-sour chicken

This was my first attempt at making this dish, simply because sweet-n-sour anything is not a favorite of my hubbys. However, yesterday I decided to break away and "just do it". I was pleasantly surprised with how well it turned out! I started with a recipe, but tweaked it myself.... :) Hope you all enjoy it!

What I used:
2 boneless skinless chicken breasts, cut up
1 cup ketchup
3/4 cup apple cider vinegar
2 tsp. dijon mustard
1 1/2 cups packed brown sugar

Preheat oven to 350. Put last 4 ingredients in a saucepan and bring to a boil. Once it has boiled turn it down to low and simmer for 30 min., stirring every now and then. Grease a baking dish and put your cut up chicken in it then pour sauce over the chicken. Bake for 30 min. I served this dish over rice and with a fresh garden salad. It was so yummy! My hubby even enjoyed it!
