Bruschetta Chicken

A fancy name for an easy dish! We had a busy afternoon yesterday and by the time I got home and got around to starting dinner it was around 5. From start to finish I had an entire meal ready by 5:45 and it took hardly any time at all. The chicken was esp. easy! Once you take a bite into this delicate piece of meat your mouth will be rewarded with wonderful flavors you will not soon forget!

What I used:
2 boneless skinless chicken breasts
3 Tbsp. flour
1 egg (whisked)
1/4 cup dry bread crumbs (I used Italian)
1/4 cup Parmesan cheese
1 tbsp butter (melted)
1 tomato cut up
dash of basil
1 tbsp vegetable oil
dash of salt

Roll the chicken in the flour to coat, then dip in egg and place in greased baking dish. Take the bread crumbs, p-cheese & butter and mix together to make it crumbly. Then sprinkle over chicken to coat it. Cover loosely and bake for 20 min. at 375. In the meantime mix together the tomato, basil, salt and oil. Remove foil on chicken spoon the tomato mixture onto chicken and cook for about 6 min. longer. Tastes fabulous!

I made this for a family picnic last summer where we all had to make some kind of chicken and my chicken disappeared the fastest. This is a really good recipe, especially when you use fresh basil!!!!
