Shake and bake

An old favorite, oldie but goody I suppose you could say :) How long has shake and bake been around? Goodness, for ages it would seem! I'm sure before the boxed version was invented women were coming up with their own! Which is exactly what you can do as well! This chicken dish stores great, which is esp. nice since my hubby takes his lunch to work everyday. I can just put it in a plastic container and it keeps it nice and fresh for his lunch the next day!

What I used:

3 chicken thighs
1/2 cup parmesan cheese
1/4 cup dry Italian bread crumbs
1tbs. melted butter
2tbs. dijon mustard

Pre-heat oven to 425. Once your butter is melted mix it with the mustard then use a pastry brush to brush over chicken. Put your p-cheese and dry bread crumbs in a resealable bag and mix together. Drop your chicken in bag one piece at a time and shake it up. Place in a sprayed baking dish. Repeat with other pieces of chicken. Bake at 425 for 25 min. turn chicken once then bake for another 25 min. or until juices run clear. I enjoy fixing this when we have company because it is so yummy and always a crowd pleaser!
