New chicken recipe!

A new recipe all! This happens to be a recipe from a dear friend of mine :) She is a lover of all things chicken, as is my family! I have yet to try this recipe but Em says it is delish! Hope you enjoy!


Blackened Chicken

6 medium boneless, skinless chicken breasts

6 T butter or margarine

1 t garlic paste

4 T finely grated onion

1 t cayenne pepper

2 t sweet paprika

1 ½ t salt

½ t white pepper

1 t black pepper

¼ t ground cumin

Step 1:

Slice each chicken breast in half, horizontally.

Flatten each slightly with the heel of your hand.

Step 2:

Melt butter or margarine in a small pan (or microwave) together with the garlic paste.

Step 3:

Combine all remaining ingredients in a shallow bowl and stir well.

Brush the chicken pieces on both sides with the melted garlic butter or margarine.

Sprinkle evenly with the seasoned mixture.

Step 4:

Drizzle each piece of chicken with remaining butter.

Place the chicken pieces in a large, heated skillet or frying pan.

Cook until the underside begins to blacken – about 2-3 minutes.

Turn over and cook for 2-3 minutes more, or until cooked through.

Serve hot with a green salad!
