Heart Warming Potato Soup

There is nothing like a good hearty potato soup on a cold wintery day! This recipe is yet again from a friend of mine. I have not tried this recipe, but she says it is a winter favorite of theirs. Makes me want to go make my own Potato soup! Thanks Em for the recipe!


Potato Cheese Soup

4 c sliced potatoes

2 c water or chicken stock

2 t salt

Cook the above ingredients until potatoes are tender. Keep the liquid.

Saute:

1 sm onion, sliced in

1 T oil

Now place some of the cooked potatoes, the saved liquid, and the sautéed onion in a blender and puree (with blender no more than half full) until all the potatoes are smooth. Return the potato mixture to the pot and add:

3 c milk.

Now add:

1 c grated cheese

2 T butter

1/4 t pepper

pinch garlic powder

Stir continuously. Heat until cheese is melted and soup is hot but not boiling. If thicker than you want, add more stock and then adjust the seasonings to your taste.
