Monkey see Monkey do....

Ever been in the mood to make monkey bread but never quite sure how to make it? Thanks to a friend of mine, Rachel, she has given us all a recipe and it looks pretty easy! Give it a try!

Monkey Bread

  • 3 packages refrigerator biscuits
  • 3/4 cups sugar
  • 1 teaspoon cinnamon

Grease bundt pan. Cut biscuits in 1/2, drop in cinnamon and sugar mix. Drop in pan.

  • 3/4 cup brown sugar
  • 1 stick margarine

Boil 1 minute, pour over biscuits. Bake at 350 degrees for 30-35 minutes.

Happy Birthday Cheesecake!

This year for my birthday my amazingly talented hubby made my favorite cake in all the world! Strawberry cheesecake! What a guy! It is a simple recipe (completely not healthy for you) and it tastes just as good (if not better!) than it looks! Give it a whirl and let me know what you think!

What he used:
1 pkg. cream cheese
1 carton (8oz.) whipped topping
1 cup powdered sugar
1tbsp. vanilla
1 graham cracker crust
1 can strawberry pie filling

Mix the cream cheese, whipped topping, p-sugar and vanilla. Once smooth pour into crust and smooth over. Top with pie filling, cover and refrig. until ready to serve. Refrig. leftovers. Simply delicious!

Candied nuts by Mrs. Noggle

A quick recipe for you nut lovers out there!!




Candied Nuts

1 C pecan halves 250 ml

1 C walnut halves 250 ml

1 C peanuts (unsalted) 250 ml

1 egg white 1

1 T water 15 ml

¾ C sugar 190 ml

1 T cinnamon 15 ml

1 t nutmeg 5 ml

½ t salt 2 ml

Combine nuts in large mixing bowl. Beat egg white with water until frothy. Pour over nuts. Toss until all nuts are wet. Drain off excess egg white. Add remaining ingredients. Toss to coat completely. Spread on ungreased cookie sheet. Bake at 250°F (120°C) for 25 to 30 minutes. Shake or stir every 10 minutes to prevent sticking.

Yield: 3 C (750 ml)

Kitchen Tip:

Do you have little ones running around your home? Once little tykes become mobile it would seem that they can get into anything and everything. Though my hubby and I are not the type of parents that "baby proof the house", we do want our little one to be safe. Even though our little one is not yet mobile, the day is quickly approaching! One quick tip, when in the kitchen, keep those handles of the pots and pans turned inward, so as not to have the handle sticking out where little hands can reach! It would seem a "duh" kind of a tip, but we would all be surprised at how often we don't do it! Thinking about those little hands reaching up and pulling something burning hot down on them is incentive enough to try and remember to do this!

Waffles by Mrs. Spees

Who doesn't enjoy a great waffle now and then? This waffle recipe comes via a friend of ours. It is from her mom and she says they are just fabulous! Enjoy!


Waffles
1/2 C luke warm water
1 pkg yeast
Let stand 5 minutes
Combine
2 C warm milk
1/2 C veg or canola oil
1 tsp salt
1 tsp sugar
Beat in 2 C of flour
Cover and let stand for 8 hours! I did waffles for dinner and so I had to mix them up in the morning. Don't rush the 8 hours either, they won't be fluffy. :( You can also make them the night before and cover them in the fridge.
Add 2 eggs and pinch of baking soda and mix. Ready to make the waffles!
Makes 6 servings
Enjoy! It's a different kind of waffle, but by far my favorite! We had them with syrup and butter as well as strawberries and whip cream last night. :)

Tortellini

We had this meal last night and it was so wonderful!

What I used:
2 pkgs. Tortellini
Your favorite pasta sauce, I used Ragu Parmesan Cheese and Moz. sauce (warmed up)

Yup, that is all! This is stuffed pasta and everything you need is right in the pasta shell already! I have yet to learn how to make this homemade, so the package works for me! All you have to do is boil the pasta for 12-14 min., drain and put your favorite pasta sauce over it and your meal is ready to serve! Enjoy!

Shake and bake

An old favorite, oldie but goody I suppose you could say :) How long has shake and bake been around? Goodness, for ages it would seem! I'm sure before the boxed version was invented women were coming up with their own! Which is exactly what you can do as well! This chicken dish stores great, which is esp. nice since my hubby takes his lunch to work everyday. I can just put it in a plastic container and it keeps it nice and fresh for his lunch the next day!

What I used:

3 chicken thighs
1/2 cup parmesan cheese
1/4 cup dry Italian bread crumbs
1tbs. melted butter
2tbs. dijon mustard

Pre-heat oven to 425. Once your butter is melted mix it with the mustard then use a pastry brush to brush over chicken. Put your p-cheese and dry bread crumbs in a resealable bag and mix together. Drop your chicken in bag one piece at a time and shake it up. Place in a sprayed baking dish. Repeat with other pieces of chicken. Bake at 425 for 25 min. turn chicken once then bake for another 25 min. or until juices run clear. I enjoy fixing this when we have company because it is so yummy and always a crowd pleaser!

Cheesy chicken and pasta

Are you a cheese fan? If so, this is the meal for you!! It is bursting with a ton of cheese flavor! It is quick, simple and on the table in no time at all!

What I used:
1 cut up chicken breast
bow tie pasta
1 can cream of mushroom soup
8 oz. velveeta cheese
hint of garlic powder
dash of salt and pepper

Cook your pasta. Meanwhile cook up your chopped up chicken breast. Add your soup and cut in your cheese. Let the cheese melt and mix it all up well. Once cheese is melted and heated through your meal is ready to serve!

Favorite meal when homesick....

Growing up in my family there were several meals we enjoyed having frequently and coming from a family of 7 they needed to be within a reasonable price range. Now, some of those meals I make for my own family and though they may not seem spectacular, they remind me of home and now my own family enjoys them just as much! This meal is so simple and I know it is a Harrington favorite, it is called "Brown Gravy and Rice". Simple name, simple meal but tastes so yummy!

What I used:

Rice (enough for your family)
1 lb. ground turkey
1 packet of brown gravy mix

Get your rice cooking. Brown up your turkey and follow the directions on the back of your brown gravy mix. If you just bought the envelope of mix it will tell you add one cup of water and pour in the mix. Let it boil, then simmer. Once done you dish up your rice and pour your gravy mix over it. Hardly any time at all!

Kid pleasers

I have come up with a spectacular sandwich that kiddos are going to love! I have a nephew that is 2 and he certainly approved. It is your typical grilled cheese sandwich with a flare! Kind of spices things up a bit!

What I used:
two slices of sandwich bread
one slice of individually wrapped cheese
5 pieces of pepperoni
butter
hint of garlic powder

Butter your bread and sprinkle a hint of garlic powder on it. Place in your heated skillet butter side down. Place cheese and pepperoni on next then top with the other slice of bread buttered side up. Allow to get lightly/med. brown then flip to brown the other side. Serve nice and warm.....oooo lala! It is divine!

Chad's Pesto Pizza

This recipe comes from my fabulous hubby! He made this delicious chicken pizza the other night and it turned out fabulous! The original recipe came from Taste of Homes Light and Tasty magazine, but we managed to tweak it a bit for our liking :) It is a wonderful gourmet pizza and really does not cost all that much to make! Go ahead, give it a try!


What he used:

1 pkg. active dry yeast
1 cup warm water
2 3/4 cup bread flour
1 tbsp plus 2 tsp. vegetable oil, divided
1 1/2 tsp. salt, divided
2 chicken breasts cut up into pieces
1 small onion, halved and thinly sliced
1 cup bell pepper
1 small can of mushrooms
1 1/2 cups shredded cheddar cheese
3 tbsp. prepared basil pesto
sprinkling Pizza Seasoning

In a large mixing bowl, dissolve yeast in warm water. Beat in the flour, 1 tbsp. oil, sugar and 1 tsp. salt.
Turn onto a floured surface and knead until smooth and elastic. Place in a bowl coated with cooking spray, turn once to coat top and cover to let rise until doubled, 1 hr.
In a large skillet over med. heat, cook chicken, onion, pepper and mushrooms in remaining oil until chicken is no longer pink and vegetables are tender. Remove from the heat.
Punch dough down; roll into a 15" circle and transfer to a pizza pan. Build up edges slightly. Spread with pesto and pizza seasoning. Sprinkle with remaining salt. Top with chicken mixture and cheese.
Bake at 400 for 18-20 min. or until crust and cheese are lightly browned.

Taco Ring

Looking for a quick Sunday meal? If your family is like ours, when we get home from church on Sunday morning our stomachs are growling and waiting for dinner is something not wanted! This Taco Ring is so easy, delicious and will be on your table in under 20 min.! Give it a try, it is so yummy!

What I used:

2 tubes of refrigerated crescent rolls
1 lb. ground turkey
1/2 can of diced tomatoes (you can use fresh as well)
1 cup grated cheese
1/2 cup ketchup

Brown meat. Take you average size pizza pan and roll out the crescent rolls so that the small point is facing out. Make a big circle with them being sure to pinch together each corner. Take your meat and spread it across the big portion of your crescent rolls, go all the way around. Next take your tomatoes and do the same followed by your ketchup and cheese. Now take the small pointed end of the crescent roll and bring it around and pinch it underneath the bigger portion. Be sure to get it sealed together. Repeat all the way around the circle. Bake at 350 for 12 min.

Heart Warming Potato Soup

There is nothing like a good hearty potato soup on a cold wintery day! This recipe is yet again from a friend of mine. I have not tried this recipe, but she says it is a winter favorite of theirs. Makes me want to go make my own Potato soup! Thanks Em for the recipe!


Potato Cheese Soup

4 c sliced potatoes

2 c water or chicken stock

2 t salt

Cook the above ingredients until potatoes are tender. Keep the liquid.

Saute:

1 sm onion, sliced in

1 T oil

Now place some of the cooked potatoes, the saved liquid, and the sautéed onion in a blender and puree (with blender no more than half full) until all the potatoes are smooth. Return the potato mixture to the pot and add:

3 c milk.

Now add:

1 c grated cheese

2 T butter

1/4 t pepper

pinch garlic powder

Stir continuously. Heat until cheese is melted and soup is hot but not boiling. If thicker than you want, add more stock and then adjust the seasonings to your taste.

New chicken recipe!

A new recipe all! This happens to be a recipe from a dear friend of mine :) She is a lover of all things chicken, as is my family! I have yet to try this recipe but Em says it is delish! Hope you enjoy!


Blackened Chicken

6 medium boneless, skinless chicken breasts

6 T butter or margarine

1 t garlic paste

4 T finely grated onion

1 t cayenne pepper

2 t sweet paprika

1 ½ t salt

½ t white pepper

1 t black pepper

¼ t ground cumin

Step 1:

Slice each chicken breast in half, horizontally.

Flatten each slightly with the heel of your hand.

Step 2:

Melt butter or margarine in a small pan (or microwave) together with the garlic paste.

Step 3:

Combine all remaining ingredients in a shallow bowl and stir well.

Brush the chicken pieces on both sides with the melted garlic butter or margarine.

Sprinkle evenly with the seasoned mixture.

Step 4:

Drizzle each piece of chicken with remaining butter.

Place the chicken pieces in a large, heated skillet or frying pan.

Cook until the underside begins to blacken – about 2-3 minutes.

Turn over and cook for 2-3 minutes more, or until cooked through.

Serve hot with a green salad!

Tater Tot Casserole

Not sure if you all are fans of the famous tater tot, but this is a tasty meal and doesn't take much time, which is pretty precious these days! Who wants to spend hours in the kitchen making a meal when you have little one or even big kids around to spend time with?! :)

What I used:

1 lb. ground turkey
1 can cream of mushroom soup
dash of salt and pepper
1 dollop of daisy (dollop of sour cream...I couldn't resist!)
1 cup shredded cheddar cheese
1 bag of tater tots

1. Brown your meat. Once browned add your soup, mix well.

2. Add your meat to a greased baking dish, mix in sour cream and cheese. Top with tator tots. Pop it in the oven at 375 for 30-35 min.

Fiesta Lasagna

I got this recipe out of Taste of Home's Dec./Jan. magazine but I made a few revisions of my own. It tasted like an enchilada with noodles :) My hubby said, "Mexican met Italian!" It was pretty good and fun to make, though it did take a bit of time.

What I used:

2 cut up boneless skinless chicken breasts
1 can chili beans
1 can diced tomatoes
1 can chilies
1 can refried beans
1 cup salsa
3/4 cup sour cream
3/4 cup cottage cheese
1 1/2 cup mozz. cheese
Dash of Oregano
Dash of cumin
Dash of salt and pepper
1 pkg. taco seasoning

9 lasagna noodles


Get your water boiling for the lasagna noodles and cook until tender. Meanwhile cook up your chicken. Once cooked all the way through add your chili beans, tomatoes, chilies, refried beans, salsa, seasonings and taco seasoning. Heat all the way through. In a separate bowl mix your sour cream, cream cheese, cottage cheese and mozz. cheese.
Grease a 9x13" dish and pour 1 cup of meat mixture into the bottom of the dish. Take 3 lasagna noodles and place on top of the meat mixture, then add meat mixture and cheese mixture. Layer 3 times. Cover and bake at 350 for 1 hr. Once done you can add more sour cream and mozz. cheese on top and bake uncovered for 10-12 more min.

The Perfect winter meal....chili!!

This meal can be made up in 30 min. and is certain to warm up your insides on a cold wintery day!

What I used:

1lb. ground beef
2 cans chili beans (drain)
1 can tomato sauce
1 can chili ready tomatoes
1tsp. salt
1 tsp. pepper
1tbsp. garlic powder
4 tsp. chili powder
grated cheese for topping
hint of Italian seasoning for presentation

Brown the beef. Put all of the listed ingredients above and the browned meat into a large pot. Bring to a slight boil then let simmer for 15 min. Tastes WONDERFUL!!! The bread recipe below goes great with this chili!

Wonderful Tasting Challah

(Please note: If you have the Taste of Home baking book this recipe can be found on pg. 342)

Last week I was feeling.....spontaneous! I wanted to try something I had not yet tried. I had always seen the pictures of braided bread and thought it must be hard to do....I was wrong! It is easy, though it does take time waiting for the dough to rise etc.. but really it is not hard at all! Give it a try!

What I used:
2 pkgs. active dry yeast
1 Cup arm water
1/2 cup vegetable oil
1/3 cup sugar
1 tbsp. salt
4 eggs
6 to 6- 1/2 cups all purpose flour

Topping:
1 egg
1 tsp. cold water
1 tbsp sesame seeds or poppy seeds, optional

1. In a large mixing bowl, dissolve yeast in warm water. Add the oil, sugar, eggs and 4 cups flour; beat until smooth. Stir in enough remaining flour to for a firm dough.

2. Turn onto floured surface and knead until smooth and elastic, about 6-8 min. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hr.

3. Punch dough down. Turn onto slightly floured surface; divide in half. Divide each portion into thirds. Shape each piece into 15" rope. Place three ropes on a greased baking sheet and braid; pinch ends to seal and tuck under. (when braiding bread you start braiding in the middle finish that side then switch to other to finish the braid) Cover and let rise until doubled, about 1 hr.

4. Bet egg and cold water; brush over braids. Sprinkle with seads if desired. Bake at 350 for 30-35 min. or until golden brown. Remove from pan to wire rack to cool.

Helpful Hints

Are you one of those people that enjoys collecting recipe cards? Do you find them scattered EVERYWHERE and never are around when you need them? Something that I have found to be helpful is to ORGANIZE them! I have taken photo albums and used them to put my recipe cards in. Each photo alum is a different type of food....I have a beef one, chicken, desserts, etc... That way when I want to search for a certain recipe I know RIGHT where to find it! Plus, since it is a photo album, it is behind plastic so when I am cooking or such and maybe splatter some sauce or something, all I have to do is wipe off the plastic, not write out an entirely new card! Hope it helps!

Speedy Beef Hash

Breakfast anyone? This makes a fantastic breakfast or even lunch! My hubby enjoys a little spice in his food so this was the perfect meal for him! It takes maybe 20 min. to make and you can add or take away anything!

What I used:

1 lb ground turkey
3 cups hash browns
1 cup salsa
1/4 cup ketchup
salt and pepper to season
Sprinkling of monterey jack cheese

Brown your meat and add potatoes. Wait until your potatoes are slightly brown before adding the salsa, ketchup, salt and pepper. Mix well, heat through and top with cheese. You can change or add anything in here. Eggs and sausage would even be great if you enjoy them!

Cherry Pie

Have you ever flipped through your cookbooks or food magazines and ever thought "sure wish my foods would turn out looking like that!" Well, they can! With this pie it is basically picture perfect! I had a few bubbles of cherry pie filling pop through, but the perfect looking lattice made up for that :)

What I used:

2 cups flour
2/3 cup shortening
dash of salt
6-7 tbsp. cold water
2 cans cherry pie filling

You can follow the recipe below that has tells you how to make the dough, this recipe makes enough dough for two crusts which is what you will need to make a lattice.
Once your dough is workable, divide the dough in 1/2 making one 1/2 slightly bigger than the other. Roll out the bigger portion and place in your pie dish. Poor in your pie filling from the can or the pie filling you have made up. Then, but in small amounts of butter all across the top of your pie. Next, roll out the other portion of dough and cut several strips long enough to go all the way across your pie plate. Then begin making your lattice. Once you have finished cut all the strips so that they are even with the pie plate. Trim your bottom crust to 1/2" from the pie plate and begin folding your bottom dough up over the top of the end of the lattice strips making sure to pinch them to seal the edges. Once that is accomplished you can flute the edges by taking a small portion of dough between your index finger and thumb and use your opposite hand to gently push down in the middle. Continue this method all the way around the edge of the pie plate. Bake at 375 for 1 hr. After the pie was done I just sprinkled a small amount of sugar across the top, this is totally optional!
