Cinnamon Rolls

This recipe is from a cookbook that I have containing many restaurant recipes! These are supposed to taste similar to the Cinnabon rolls you can get. I made them just a little different, I didn't add the cream cheese frosting....trying to watch calories and all :) Hope you enjoy them, they really are DELICIOUS!

What the recipe called for:
Rolls:
1/2 Cup warm water
2pkgs. dry yeast
3T. sugar
3 1/2oz. pkg. vanilla pudding mix
1/2 cup margarine--melted
2 eggs
1tsp. salt
6 cups flour
Cream Cheese Frosting:
8oz. cream cheese
1/2 cup margarine
1tsp. vanilla
3cups confectioners sugar
1T. milk

To make frosting. mix all ingredients until smooth.
For rolls: In a bowl combine water, yeast and sugar. Stir until dissolved. Set aside. In a large bowl, take pudding mix and prepare according to directions. Add margarine, eggs ad salt. Mix well. Then add yeast mixture. Blend.
Gradually add flour;knead until smooth. Place in a greased bowl. Cover and let rise until doubled in size. Punch down and let rise again.
Roll out on floured surface. Take 1 cup soft butter and spread over surface. In a bowl, mix 2 cups brown sugar and 4teaspsoons cinnamon. Sprinkle over top. Roll up very tightly. With a knife, put a notch every 2". Cut with thread or knife.
Place on a greased cookie sheet 2" apart. Take hand and lightly press down on each roll.
Cover and let rise until double again. Bake at 350 for 15-20 min. Remove when they start to turn golden, don't over bake!
Frost warm rolls with cream cheese frosting.

I have the worst luck with yeast!! ugh. So I generally stay away from making homemade breads of any kind, but this looks SO GOOD. I'm gonna have to give yeast another try.
