Easy peasy recipe that will satisfy the bread lover in yourself!
What I used:
1lb ground beef
2/3 cup honey garlic bbq sauce
1 can grands biscuits
shredded cheddar cheese
Brown your beef and preheat your oven to 350 degrees. Once your meat is cooked through add the bbq sauce and simmer until sauce is a little thickened. Spray a jumbo muffin tin and smoosh the biscuit into the bottom and up the side of the muffin tin. It is totally fine if your biscuit does not reach all the way up the sides. Spoon some of your meat and bbq sauce mixture onto the top of the biscuit. Be sure to not over fill your muffin tin because the bread is going to rise as it cooks. Top with cheese and bake for 10-13 minutes and top with a smidgen of parsley if you so desire. A simply tasty meal!!
From my kitchen to yours, enjoy!

Individual Taco Cups
If you have had my individual lasagna , this is the same kind of idea. Super easy to make but looks like you slaved over a hot stove all day.... :)
They are full of flavor, satisfy the Mexican craving, and are simply SO delicious!
What I used:
12 egg roll wrappers
some cheese sauce
1 lb. ground beef
1 can fat free refried beans
1 envelope taco seasoning
shredded cheddar cheese
sour cream (optional)
salsa (optional)
guacamole (optional)
Pre-heat your oven to 375 degrees.
Brown your beef and add taco seasoning. Once beef is browned, add beans. Mix well and cook until heated through.
Take a large muffin tin and spray with non-stick spray. Insert your egg roll wrapper and press the sides all around. It should be sitting nicely in your muffin tin with the edges standing up. Place a small amount of cheese sauce on the bottom and spread around. Add meat mixture and salsa. Top with a small square piece of egg roll wrapper. Repeat layers once more and top with cheese.
Bake for 10 min. or until heated through and wrappers are brown. Remove from oven and let cool for 5 min. before serving.
Voila! So easy right?

24 jumbo pasta shells
2 cups taco sauce, divided
4 oz. cream cheese
1/2 cup cottage cheese
1 cup salsa
1 cup Mozzarella cheese, shredded
1/2 cup cheddar cheese, shredded

Cover and let cook on med-low heat until cheese is melted down and creamy. Stir frequently. Add in cottage cheese once cream cheese is creamy. In the mean time get out a baking dish and pour salsa on the bottom of dish.
Take your cooled down pasta shells and fill them with the meat mixture and place in baking dish. repeat until all shells are filled and meat mixture is used up. Cover and bake for 30 min.
While shells are cooking crush your tortilla chips and mix in your shredded cheeses. Super easy enchiladas
A quick and easy meal to satisfy that need for Mexican food!
1 lb. ground beef
1 can enchilada sauce
1 can cream of mushroom soup
1 can chilles
6 flour tortillas
Shredded cheese
sour cream
Brown you beef and add the sauce, soup and chilles. In the meantime warm up your tortillas to make them a little more flexible if you've kept them stored in the fridge like I do. Once your meat mixture is all set and warmed up, take a tortilla and spoon some of the meat mixture into it, add a little cheese and then roll it up. Place in your ungreased baking dish and repeat. You should have some meat mixture left over to pour over the top. Bake uncovered at 350 for 20 min. Top with however much cheese you wish and bake for another 4-5 min. Once you have removed the dish from the oven and served yourself a hearty helping, you can add your sour cream.
VERY, tasty and super easy :)

Taco Salad
Summer is just around the corner and around these parts it will be here sooner rather than later! In the summer I do my best to find recipes that do not include turning the oven on. The great outdoors is good enough at heating up our house for us, no sense in helping it along the way!
These taco salads were simply delicious and just hit the spot!
What I used:
4 Tortillas, burrito size
2 cups (or more) of veggie oil
1 lb. ground beef
1 can refried beans
1 envelope taco seasoning
shredded cheese
shredded lettuce
1 tomato diced
1 dollop of sour cream
Pour your oil into a small sauce pan and turn to med-high heat. Let the oil get good and hot, it will begin to crackle and then you will know it is ready for ya!
While waiting for your oil to warm up get your beef cooking in a skillet. Once beef is browned add taco seasoning and 3/4 cup water. Bring to a boil then simmer. Add your beans and mix well so the beans cook through.
Take your tortillas and once the oil is hot enough. fold it up in like a bowl shape so that it will fit in your sauce pan and begin to take the form of a bowl when it cooks. Use two wooden spoons to keep the tortilla open in a bowl shape. You will know when your tortilla is done when the outside of it is a golden brown. You can also cook the inside of the tortilla if you wish, just turn it upside down once the outside of the bowl is cooked. Remove from oil and drain upside down on a wire rack with a paper towel underneath to catch the dripping oil.
Cut up your tomato and lettuce. Spoon about 1/4 cup of meat mixture into bottom of the bowl. Top with lettuce, tomatoes, cheese and sour cream. Sooooo good!
From my kitchen to yours, enjoy this tasty meal!

Fried Steak
So are you ready for this one? I don't know if you are ready to handle this recipe.....I mean it is SO easy it will make you feel like you actually ordered take out instead of slaving over a hot stove :) Ok, ok, I'll share this super easy recipe! Not only is it really easy, it is bursting with flavor but I have to put up a warning here: if you are a health nut, this would so not be the recipe for you. Everything in moderation though right? Just do a few extra sit ups and jog around the block to even it all out :) From my kitchen to yours, ENJOY!
What I used:
2 Cube steaks
1 cup flour
dash of seasoned salt (to taste)
dash of pepper (to taste)
1/4 cup oil
1 tbsp. butter
Put your flour on a plate and mix in your salt and pepper. Place one steak in the flour mixture and be sure to coat, flip over and coat opposite side. Once your oil is nice and hot add your butter, if your butter sizzles you'll know the oil is hot enough. Place your steak in the oil and repeat process with other steak. Cook on both sides for several minutes until steak is cooked through.
Easy enough? Ya, I'd say so! Now take a glorious bite of this deliciousness and let your taste buds thank you :)

New twist on grilling burgers
At the risk of having things thrown at me, the weather we have been having has been gorgeous! Temps in the 70's just scream "grilling weather!" So that is exactly what we have been doing! My hubby is the grill master and it has been so great to have a little tease of summer by enjoying some grilled entrees! This one is a little twist on the common grilled burger. My hubby is forever trying to mix things up when it comes to his grill recipes and this one seems to be a hit!
What he used:
1 lb. ground beef
1 cup shredded cheese, divided
sprinkling of Cajun seasoning (to taste)
salt and pepper (to taste)
Form a thin layer of meat into a patty, layer with cheese and top with another thin layer of beef formed into a patty. Top with cajun seasoning and salt and pepper to taste. Continue until beef is all used up.
Place on grill and cook until no longer pink inside (unless of course you enjoy your burgers still mooing :)
Such a great tasting burger if I do say so myself! Can you see the cheese already oozing out of there?! Mmmm-mmm good! From our kitchen to yours, ENJOY!

Rolled up lasagna
This is a GREAT recipe to make when you have company. It is one of those recipes that can easily be added to for having extra people over. It is lasagna with a twist!
What I used:
1lb ground beef
10 lasagna noodles, uncooked
1 jar green pepper and mushroom spaghetti sauce
1 package cream cheese, softned
1 1/4 cup cheese, shredded
Get your water boiling for your pasta and start browning your beef. Once your water is ready add pasta and let cook until softened.
Once meat is browned add 1/2 of sauce and all of cream cheese. Cook until creamy.
In a glass baking dish, spray with non-stick cooking spray and spread just a small amount of sauce from jar into bottom of dish. Once pasta is cooked and cooled a bit lay out each noodle and spread enough meat mixture onto each noodle to cover the noodle, top with a small amount of cheese and roll up. Place in baking dish and once all the noodles are rolled up and placed in dish, top with remaining sauce and cheese.
Cover with foil and bake at 350 for 20 min. Remove foil and cook a remaining 10 minutes.
Before being cooked this is what it would look like.
The finished product.....Sooooooo yummy!

My husband the chef pt. 2
My husband would never think of fixing a meal without a piece of meat on the menu :) He is your typical "meat and potoatoes" kinda guy, and I don't mind at all! This steak recipe was FAB-U-LOUS!! It not only tasted great but the presentation he put together was divine :)
What he used:
4 beef tender chuck steaks
3 Tbsp butter, divided (melt 2 tbsp.)
1 tsp. soy sauce
2 tsp. parsley
2 tsp. garlic powder
Salt and pepper to season
Steak...it's what's for dinner :)
Get your butter melting in your skillet. Salt and pepper your steak then add your steak to the skillet.
Be sure to cook on both sides. You can cook your steak as long or as little as you wish....as long as it is cooked. My hubby enjoys his steak still mooing, as I call it. I like it more of a med-well.
Mix your sauce together
Once your steak is cooked to your liking, remove from pan and slice
Drizzle sauce over top
Finished product..... DELICIOUS! I can't tell you how great this steak (and meal!) was! My amazing man did a wonderful job! He even set the table and lit the candles. Our home is "G" rated so we had apple juice in our wine glasses :) It was a wonderful evening together :)
From our table to yours, bon appetite!

Shepherds Pie
I have had this dish many times but had never put my mind to making it....honestly I don't know why! It was a wonderful hit with the family! Even my two year old was asking for more and that is a rare occasion! It sure does "hit the spot" on those cold wintry days.
What I used:
1lb. ground beef (for a healthier option you can use turkey)
1/2 bag of frozen mixed veggies
3/4 cup beef broth
2tsp. Worcester sauce
12 red potatoes, peeled, quartered and cooked
Pre-heat your oven to 400 degrees. Get your potatoes in your pot to boil. If you don't have much time I am sure you can also use the boxed potatoes and make your recipe even easier! While the potatoes are cooking put brown your beef until cooked through. While your beef is browning add your broth, Worcester sauce and veggies. Cook until the meat is brown. Now, back to your potatoes. Make up your mashed potatoes how you normally do. I added a dash of garlic powder just for some added flavor. Take a baking dish (depending on your family size) I used a dish just a little smaller then a 9x13. Spray with cooking spray. Add your meat and veggie mixture. Top with your mashed potatoes. Bake uncovered for 30 min., until the mixture is bubbly or the potatoes are browned.

Taco Salad
This is a great summer meal! Easy to whip up, won't heat up the house, and so savory! The best thing about this salad is that you can mix it up with ingredients to whatever you enjoy!
What I used:
1 Cucumber, peeled and cut up into bite size pieces
2 roma tomatoes, cut up
1lb. ground beef
crushed Doritos
Creamy French dressing
Top with sour cream
Cook up your beef. While your beef is browning get your cucumber and tomatoes cut up. Put them in your salad bowl. Add beef and crushed doritos. Mix together with enough salad dressing to your taste. I didn't measure the amount.

Favorite Lasagna Recipe
Ok, we all know how lasagna can take FOREVER to make, right? Well, it doesn't have to anymore!! With this recipe you can have it made up in as quickly as 30 min.!! No joke! I served it up tonight and it was a huge hit! I made Lima Beans and home made garlic bread on the side. It was delicious!
What I used:
1 lb. ground venison (you can use beef if you want)
1 can (large size) of spaghetti sauce with mushrooms
6 no need to boil ahead of time lasagna noodles
1 cup shredded Cheddar cheese
1 Carton of small curd cottage cheese, the large carton
Preheat oven to 350. Brown your meat. Place a small amount of sauce in the bottom of a baking dish. I used a smaller dish than a 9x13 but you can change up the recipe and dish size according to your family size. Layer three noodles then add more sauce, meat, cheddar cheese and cottage cheese. Repeat layer again and end with shredded cheese on the top. No need to cover, just put in the oven for 30 min. tops and there you have it! I was a little leery about using the no need to boil noodles, simply because I had never used them before. However, I am pleased to tell you they work so great and take away the hastle of boiling noodles then dealing with hot noodles as you place them in your dish!

Primavera Beefy Pasta
I wasn't really sure what to call this dish, but that name sounds pretty sophisticated to me! It was one of those recipes that started out as one thing but because of my love for "tweaking" it became something totally else! My hubby RAVED about it so it must have turned out pretty decent :)
What I used:
1 lb. ground beef
1 can diced tomatoes, undrained
2 cloves of garlic minced
1 cup (or so) of Zesty Italian dressing
A sprinkling of Mozz. cheese
A sprinkling of Cheddar cheese
Pasta (any small kind you wish really) I used the kind that looks like mini lasagna noodles because they were cute! :)
Get your water going for the pasta. Brown your ground beef then add your garlic and saute together. Add your dressing and tomatoes. Once it is all heated through and your noodles are cooked and drained mix it all together. Sprinkle on your cheeses and a dash of salt if you wish. There you have it!
From our table to yours, bon appetite!
